Not all steel is created equal. The inside layer of our pans (the one that touches your food) is premium 18/10 stainless steel, which gives you incredible durability and high stain and stick. The exterior surface is high-density 400-series magnetic stainless steel, which means you can use it on any cooktop, from gas to glass, including induction stovetops. Our aluminum core layer is made of commercial grade 1050A aluminum and extends from the base up through the top edges to ensure incredibly even heating on every surface of our pans. These three layers work together to bring you reliably exceptional performance. 18/10 mirror-finish stainless steel. Classic looks, professional performance. Cooking surface does not discolor, react with food, or alter flavors. Solid stainless steel riveted handles stay cool on the stovetop. Safe and comfortable handling. Salty water can make any stainless steel rust Rust Removal: Stainless can require a bit stronger cleaning methods. This may scratch the bottom of the pan some but it will still function like new. Soap with a green scrub pad, baking soda, and bar keepers are the best options
